What is the air valve at the top of the forks for?
I bought an old Kawasaki KZ750 Ltd and noticed an air valve on the handlebars(each side). Is it to adjust the stiffness of the forks or to adjust the height?
As "afreshpath" states "It's to adjust the stiffness and travel of the front forks". Trying to put air in is a real challenge. I don't recall what pressure is required but I do remember that it is a very small amount.
You can put it in with a hand pump but you can't measure it because just putting on you tyre gauge will let out the small amount it needs.
My brother had a GPZ750 and I had a GPZ600R and we used a gauge that had a bulb attached that you would squeeze to put in a small amount of pressure, and measure it at the same time. It also had a release valve so that you could adjust it in small increments.
All this is for information only. Don't bother trying to put in any pressure. The forks always worked fine without any. The wear on the forks now would negate any benefit from adding air pressure. The idea was dropped by Kawasaki as it was too much trouble for anyone to maintain the required pressure and advances in fork design meant it wasn't necessary.
